Ramen: A Bowlful of Comfort

Ramen, a beloved Japanese noodle soup, has taken the world by storm with its rich, savory broth, springy noodles, and diverse toppings. This comforting dish is typically served hot in a bowl, with the noodles submerged in the broth. Diners often slurp the noodles directly from the bowl, savoring the interplay of flavors and textures.

 

A Symphony of Flavors

 

The heart of ramen lies in its broth, which can range from light and clear to rich and creamy. Common broths include shoyu (soy sauce), shio (salt), and miso (fermented soybean paste). Each broth offers a unique flavor profile, from the clean, salty taste of shio to the robust, umami-rich notes of miso.

 

Noodles are another key component of ramen. They are typically made from wheat flour and water, and come in various thicknesses and textures. Some popular types include straight, curly, and wavy noodles.

 

Toppings are where ramen truly shines. Common toppings include tender slices of chashu (braised pork belly), soft-boiled eggs, nori (dried seaweed), bamboo shoots, and scallions. Additional toppings, such as mushrooms, corn, and seaweed, can be added to customize the dish.

A Recipe for Homemade Ramen

 

Ingredients:

 

  • For the Broth:
    • 4 tbsp mirin
    • 150ml sake
    • 2 tbsp granulated sugar
    • 4 tbsp soy sauce
    • 250g pork belly
    • 2 eggs
    • 2 tbsp sesame oil
    • 1 onion, chopped
    • 2 cloves of garlic
    • 1l chicken stock
    • 4 heaped tbsp white shiro miso

 

  • For Serving:
    • 160g dried ramen noodles
    • 4 pieces nori
    • 4 spring onions, chopped
    • 1 tbsp sesame seeds, to garnish
    • Sweetcorn

 

Instructions:

 

  1. Prepare the Pork Belly:
    • Combine mirin, sake, sugar, and soy sauce in a bowl.
    • Place pork belly in a baking dish and pour the marinade over it.
    • Cover the dish and bake in a preheated oven at 180°C (350°F) for 2 hours, turning occasionally.
  2. Cook the Eggs:
    • Boil eggs for your desired level of doneness.
  3. Make the Broth:
    • Heat sesame oil in a pot over medium heat. Add onion and garlic and sauté until fragrant.
    • Pour in chicken stock and miso paste. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the miso dissolves.
  4. Cook the Noodles:
    • Cook ramen noodles according to package instructions. Drain well.
  5. Assemble the Ramen:
    • Divide noodles among bowls.
    • Ladle hot broth over the noodles.
    • Top with sliced pork belly, soft-boiled eggs, nori, spring onions, sesame seeds, and sweetcorn.
